Bhatwani Dal | पहाड़ियों की तरी वाली दाल | भटवाणी दाल | Uttarakhand Special | Sanjeev Kapoor Khazana

A special dal made from pound soya beans. This dal is a Kumaoni speciality. Isn't it remarkable what tasty are yet to be discovered?

Active ingredients

1 cup soya beans
2 tbsps black sesame seeds
2-3 tbsps mustard oil
1 tsp cumin seeds
1/4 tsp asafoetida (hing).
10-15 garlic cloves, squashed.
2 medium onions, chopped.
2-3 green chillies, chopped.
2-3 dried red chillies, stemmed.
1 big tomato, carefully sliced.
1/2 tsp turmeric powder.
1 1/2 tsps coriander powder.
1 tsp red chilli powder.
2 tablespoons sliced fresh coriander leaves.
Steamed rice for serving.

Technique.

1. Heat a non-stick pan, add soya beans and dry roast on a medium heat for 4-5 minutes.
2. Include black sesame seeds and roast for a minute. Take the pan off the heat and enable to cool.
3. Transfer in a mill jar and grind to coarse powder.
4. Heat mustard oil in a nonstick pan. Add cumin seeds and as soon as they begin to alter the colour, include asafoetida and blend well.
5. Include garlic and sauté for a minute.
6. Include onions and sauté till golden brown.
7. Add green chillies, dried red chillies and sauté for 30 seconds.
8. Include tomato and sauté till it turns pulpy.
9. Add turmeric powder, coriander powder, red chilli powder and blend well.
10. Include ground mixture and mix well. Include 3-4 cups hot water and blend well.
11. As soon as the mixture pertains to a boil, lower the heat, cover and cook for 10-15 minutes.
12. Include coriander and blend well.
13. Transfer in a serving bowl and serve hot with steamed rice.
