Ingredients.

2 Tbsp unsalted butter.
2 Tablespoon all-purpose flour.
1 C whole milk.
1/2 tsp nutmeg.
1.5 oz gruyere cheese, grated.
1 oz + 4 oz Pecorino Romano PDO, grated, divided.
8 pieces sourdough bread.
2 Tbsp Dijon mustard.
1/2 lb Black Forest ham, sliced.
4 big eggs.
Guidelines.
To make the Pecorino Romano PDO butter: place all active ingredients in a bowl and combine utilizing a hand mixer. Whip till light and fluffy.
