Samo, likewise called Samvat, Samvat rice, or Samak rice, is a type of millet that is typically consumed in India. It is a little, round grain that is high in protein and gluten-free. Samo is typically used in a variety of traditional dishes such as Khichdi, Idli, and Dosa. It is considered to be a healthy alternative to rice and wheat as it is easy to absorb and is a good source of minerals and vitamins. This version of healthy poha with this wonder millet is a should try!

MILLET POHA

Ingredients

1 cup banyard millet (samo).
2 tablespoons oil.
2-3 tbsps raw peanuts.
1 tsp mustard seeds.
1/2 tsp cumin seeds.
2 green chillies, chopped.
10-15 curry leaves.
2 medium onions, chopped.
Salt to taste.
1/4 tsp turmeric powder.
1/2 tsp sugar.
1 lemon wedge.
2 tbsps chopped fresh coriander.
Fresh coriander sprig for garnish.

Technique.

1. Heat a nonstick pan. Include banyard millet and roast on medium heat for 4-5 minutes.
2. Include 2 cups water, cover and cook on high heat till water is absorbed.
3. Lower the heat and cook for 5 minutes.
4. Heat oil in a nonstick pan. Add peanuts and sauté till golden brown. Drain pipes and set aside.
5. Include mustard seeds and when they begin to splutter, add cumin seeds, green chillies, curry leaves and blend well.
6. Include onions and mix well. Include salt, turmeric powder and mix well. Sauté on medium heat for 2-3 minutes.
7. Sugarcoat and mix. Add cooked banyard millet and mix.
8. Sprinkle 2 tbsps water, cover and cook for 2-3 minutes.
9. Squeeze lemon, include the peanuts, coriander and blend well.
10. Transfer into a serving bowl, garnish with coriander sprig and serve hot.
