It’s more so protecting the meat in this case vs rendering down on it. Putting the fat cap between the meat and the fire source is ideal usually. In an offset smoker though you don’t have to worry about it as the fire source is far away but the heat in an offset carries through the top of the cooking chamber, making it ideal to put the fat cap facing upwards in that scenario. Hopefully this made sense.

The inter-muscular fat renders and drips on the coals . Plus that fat cap renders and just rolls off.
