For years back in the 1960βs and 70βs that is how my dad did ribs on his huge charcoal grill. No home smokers or ceramic kamados back then, so for him it was char-grilled and often patted in pineapple juice – I loved them!

Ribs over Charcoal is hard to beat. I cook mine today on a Chargiller Barrel. Used my top rack and they turned out amazing.
