Yup undercooked wings are the worst I just make mine in the oven with baking powder that makes them super crispy but I usually cook them to atleast 190.
@johnmaurer3097 I canโt remember how long really but I coat the wings in 1:1 baking powder and some sort of chicken wing seasoning then put them in the over at 425 check then after 15 ish minutes be sure to flip then once the underside is crispy pull them around 190-200 and then toss them in whatever sauce you like
I do the same with a mix of baking powder and cornstarch plus my seasonings, 425 in the oven for around 25mins per side and pull out once they reach 200-205ish. Perfectly cooked and super crispy every time!
Growing up, one of my good friend’s uncle would wrap them in foil on the grill for about 40, then hit them with the open flame for about 20-25. Never missed.

I always smoke then fry. Best of both worlds.
