  2. This is the absolute truth. I made 4 shoulders for a party a couple of years ago using your overnight method, then put them in a cooler to get them to the location. By the time we got there and got them unwrapped to shred, it had been about an hour of rest. When we pulled the bone out, most of the meat fell apart and shredded itself. Everybody still raves about how that was some of the best pulled pork they’ve ever eaten. You’re the man, Malcom

    2. You skipped the final step he was talking about in this video. Rebarking and glazing it. But I agree its all getting shredded up anyways I just shred after cooler rest and its so juicy and good

  4. There is NO WAY I could let that rest for 2 hours let alone 2 minutes.
    Back in the day when my family used to roast Hogs, as soon as it came off the spit, it went onto a cutting table. For me it was game over. After an ALL DAY watch with beer and schnapps, that was the moment for me.

  6. “Just a light coat” LOL. Love this man. He is a culinary hero. A prior generation told me, “Never take cooking advice from a skinny man.” This man brings true JOY to millions.

    His pellet-smoked turkey recipe got us the most tender and flavorful Thanksgiving turkey we had in our entire 60+ year life. And the work he does with pork…. God lets us taste a little bit of what it’s gonna be like in heaven.
