  1. Butter 🧈 with the salt and pepper is the way to go! Michael Simon does something similar with olive oil and salt. Best steak I ever had was a pichana in St Barths on my honeymoon at Tamarind. Came off the grill in a smoked cloche. Meat was from snake river farms. Could do something similar, get one of those basting covers or melting domes in stainless steel so it’s not too pretentious and give it a nice smoke with some herbs etc or whatever else is out nowadays. Just did a standing rib roast on the traeger to switch it up from the standard oven cook. Next time I should try charcoal Thanks for everything you do

  3. Bison and elk are the best red meats. Even when they’re lean it’s still so tasty.

    1. @jordanschruder2260 never had it. It’s gotta be up there with elk though. My buddy got a huge one in Alaska a couple months back, fingers crossed he passes some on.

    2. In my opinion, moose is even better than elk. I’d throw some hints at your buddy!!!

      Cow bison are amazing. We hunted them twice for the meat. My wife has been begging me to go again. Haha

  5. Malcom you could have saved the money on that Mossy Oak Bottomlands outfit. That Buffalo was so tame you could have worn your pajamas.

  6. Had buffalo when i lived in south dakota. Truly the best burger ive ever had.
