What are you boiling it in?
That’s a good question, leaving my comment here so I get notified when someone answers
pretzels are usually boiled quickly in a mix of baking soda (aka sodium bicarbonate) + water- which helps get that dark golden crust with a soft inside during baking. however, because the water in her pot looks a bit darker i think there might be some molasses in there too, also to help with the color and chew of the dough after baked.
