SANTRA RAVA MALPUA

Components

10 tbsps orange concentrate
5 tablespoons semolina (rava/suji).
1/2 cup sugar.
5 tablespoons fine-tuned flour (maida).
3/4 cup rabdi.
1/4 cup milk.
2 tablespoons yogurt.

Method.

1. Cook sugar with 2 tbsps water to make a syrup. Include 5 tablespoons orange concentrate and mix well. Cook on low heat.
2. Mix flour, semolina, remaining orange concentrate and rabdi in a bowl. Add milk and mix to a smooth batter.
3. Include yogurt and mix well.
4. Heat a non stick pan, drizzle a little oil, pour a spoonful of batter and spread it somewhat. Make some more such malpuas, keeping a little distance in between each. Cook on medium heat. When the underside is done, turn them over and cook till the opposite is equally done.
5. Turn off the heat under the syrup. Drain the malpuas and dip them in the syrup till well covered.
6. Serve hot as they are or with rabdi or ice cream.
