Potato is exchangeable. Hamburger patty made from seasoned and battered purple yam roundels is something you need to try.

PURPLE YAM BURGER

Components

600 grams purple yam (kand), peeled, cut into roundels and steamed
4 burger buns, halved and toasted
1/2 cup fine-tuned flour (maida).
2 tsps garlic powder.
1/2 tsp smoked paprika powder.
2 tsps onion powder.
1/2 tsp dried oregano.
Salt to taste.
1 1/2 cups panko breadcrumbs.
1/2 tsp dried red chilli flakes.
2 tbsps sliced fresh parsley leaves.
Ready-made corn flour slurry.
Oil for deep frying.
Mustard mayo for using.
Lettuce leaves as needed.
8 cheese slices.
Chips to serve.

Technique.

1. Take improved flour in a big plate, add garlic powder, smoked paprika powder, onion powder, dried oregano, salt and mix well.
2. Take panko breadcrumbs in another big plate, add salt, red chilli flakes, parsley leaves and blend till well integrated.
3. Coat each purple yam roundel with some refined flour mixture, dip it in the corn flour slurry and repeat this process one more time. Coat each purple yam roundel in panko mixture.
4. Heat adequate oil in a kadai. Gently slide in the roundels and deep fry till golden brown and crisp. Drain pipes on an absorbent paper.
5. To make the burger, apply some mustard mayo on one side of both the burger bun halves. Position some lettuce leaves on the base portion of the burger bun. Place a fried purple yam roundel, place a cheese slice, location another fried purple yam roundel and location another cheese piece over it. Set up some lettuce leaves and put the remaining burger bun half over it to make a hamburger. Secure with a toothpick.
6. Serve with chips.
