Pot Roast Cauliflower | Jamie Oliver’s Meat-Free Meals

This meal really gets one of the most out of the humble cauliflower, letting it stew in a mix of herbs, olive, potatoes and tomatoes to take in extreme flavour. Leave a whole bulb of garlic in too to get a lovely puréed bundle of creamy garlic-y goodness. Finish it off in the oven for that lovely crispy finish, and see just how versatile veg can be. Delish!
