When it is tea-time, and hunger pangs begin, do attempt this Bengali way of having onion fritters that is unique in its preparation.
PEYAZI
Ingredients
4-5 medium onions, very finely sliced
Salt to taste
1 tsp sugar
2 green chillies, finely sliced
3/4 cup gram flour (besan).
2 tablespoons refined flour (maida).
2 tbsps rice flour.
1/2 tsp turmeric powder.
Oil for deep frying.
Tomato catsup to serve.
Tea to serve.
Method.
1. Take the onions in a big bowl. Include salt, sugar and blend well. Gently mix and squash your fingers. Add green chillies and mix. Reserve for 10-15 minutes.
2. Add gram flour, improved flour, rice flour, turmeric powder and mix well.
3. Heat enough oil in a kadai. Gently slide in little portions of the mix into the hot oil and deep fry till golden brown and crisp. Drain pipes on an absorbent paper.
4. Serve hot with tomato catsup and tea.
