PESTO PASTA WITH VEGGIES

Components

2 tbsps basil pesto
2 cups boiled penne pasta
1/2 cup corn kernels, boiled
1 medium red capsicum, seeded and cut into triangles
5-6 broccoli florets, blanched
1 tablespoon olive oil
1 tablespoon chopped garlic
3 tablespoons Nutralite Cheesy Garlic Mayo
Salt to taste
A pinch of crushed red chillies

Technique

1. Heat olive oil in a non-stick pan. Include garlic and sauté for a few seconds.
2. Include corn kernels and sauté for a minute.
3. Include red capsicum and sauté for 30 seconds.
4. Add pasta, 1/2 cup water, basil pesto and mix well.
5. Include Nutralite Cheesy Garlic Mayo, 1/4 cup water and mix well.
6. Include salt, crushed red chillies, broccoli and toss well.
7. Transfer in tiffin box, close the lid and serve.
