PALAKWALI MOONG

Components

1 cup whole green gram (abut moong).
10-12 spinach leaves (palak).
Sea salt to taste.
1/2 tsp turmeric powder.
1/2 inch ginger piece, cut into thin strips.
2 tablespoons ghee.
1 tsp cumin seeds.
A pinch of asafoetida.
7-8 cloves.
1 tsp grated jaggery.

Technique.

1. Put moong in a pressure cooker, add salt, turmeric powder, ginger and 2 cups water. Mix, put the lid on and cook till 1-2 whistles are offered.
2. Roughly chop spinach leaves.
3. Heat ghee in a non stick pan, include cumin seeds and when they alter colour, add asafoetida, cloves, spinach and salt. Mix well and cook for 3 minutes.
4. Open the lid when the pressure reduces, include spinach mix and blend well. Include jaggery and mix once again. Cook for a minute.
5. Serve hot.
