An excellent method of utilizing Palakottai (Jackfruit seeds) in this kind i.e to turn them into these spicy and delicious deep fried vadas!

PALAKOTTAI VADAI

Components

3 cups ripe jackfruit seeds, peeled
4-5 dried red chillies, soaked for 20 minutes and drained
1/2 tsp black pepper powder
1 tsp fennel (saunf) powder
1-2 green chillies, sliced
10-12 curry leaves, finely shredded
1/4 tsp turmeric powder
2 tsps finely chopped ginger
1 medium onion, finely sliced
2 tablespoons rice flour
Oil for deep frying
Coconut chutney to serve

Approach

1. Put the jackfruit seeds in a pressure cooker. Add 2 cups water, salt, and blend well. Cover and cook under pressure for 2-3 whistles.
2. Open the cooker once the pressure has actually decreased completely.
3. Drain pipes the prepared jackfruit seeds, transfer them in a chopper, add soaked dried red chillies, and finely chop them. Transfer in a big bowl. Add black pepper powder, fennel powder, green chillies, curry leaves, turmeric powder, ginger, salt, onion, and rice flour, gently mash and blend with your hand till well integrated.
4. Take a small portion of the mix and shape it into a ball, and lightly flatten it. This is a vadai.
5. Heat enough oil in a kadai. Gently slide in the vadais a few at a time and deep fry till golden brown and crisp. Drain pipes on an absorbent paper.
6. Set up the vadai on a serving plate, serve hot with coconut chutney.
