NEW YORK STYLE CHEESECAKE

Ingredients

1 litre cow's milk
Juice of 1 lemon
A pinch of salt
8-10 digestion biscuits
2 tablespoons melted butter
1 cup powdered sugar
3 eggs
1 tsp vanilla essence
1 lemon
3/4 cup fresh cream
3 tablespoons improved flour (maida).
Strawberry jam as required.
Fresh mint leaves for garnish.

Approach.

1. Heat a pan. Include milk and once the mixture pertains to a gentle boil, add lemon juice and mix well.
2. Switch off the heat stress through a fine muslin cloth.
3. Drain excess water and put in chilled water to prevent excess cooking.
4. Transfer the mix in a grinder jar, add salt, 3 tbsps whey and grind to fine paste.
5. Pre-heat the oven to 180ºC.
6. Transfer the digestion biscuits in a zip lock bag and crush with the assistance of a rolling pin. Transfer in a bowl, add melted butter and blend well.
7. Transfer the mixture in a loose bottom cake tin and press well. Cool for 10-15 minutes.
8. Transfer the cream cheese in a bowl. Include powdered sugar and mix well.
9. Break eggs one by one and mix well. Include vanilla essence, zest the lemon and blend well.
10. Cut the lemon and squeeze 1/2 lemon in the mixture and mix well.
11. Add fresh cream, fine-tuned flour and mix well.
12. Transfer the mixture on the biscuit layer and tap to eliminate any air bubbles.
13. Add some water in a baking tray place the tin and cover with a steel plate.
14. Bake in preheated oven for 40-45 minutes.
15. Permit to cool, cut into wedges and serve with garnishes of your choice.

  2. Mam qa egg dalna zaruri h?.. Agr hm egg na daalna chahe to iska substitute kya use par skte h?

    1. As per the traditional recipe, eggs cannot be avoided. Skipping it will change the recipe altogether.
