MOONG VADA.

Ingredients.

1 1/2 cups soaked whole green gram (sabut moong).
1 tsp fennel powder.
1 tsp cumin powder.
2 green chillies, sliced.
1 tablespoon sliced ginger.
1 medium onion, sliced.
10-15 curry leaves, shredded.
Salt to taste.
1/2 cup rice flour.
Crushed black peppercorns to taste.
Oil for deep frying.
Coconut chutney for serving.

Technique.

1. Transfer the drenched moong in a food process to a coarse mixture.
2. Transfer in a bowl. Add fennel powder, cumin powder, green chillies, ginger, onion, curry leaves and salt and mix well.
3. Add rice flour, crushed black peppercorns and mix well.
4. Divide the mix into equivalent portions and roll into balls. Flatten each ball slightly.
5. Heat enough oil in a kadai. Deep fry prepared vadas till golden brown and crisp.
6. Drain on absorbent paper and serve hot with coconut chutney.
