Halva Pie Bars

Crust:

12 tablespoons saltless butter, softened
1/4 cup granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon kosher salt
1 cup all-purpose flour
1/2 cup entire wheat flour

Filling:

1 gala apple, peeled and cut into 1/4-inch-thick slices
1 granny smith apple, peeled and cut into 1/4-inch-thick slices
2 teaspoons lemon juice
2 tablespoons versatile flour
2 tablespoons brown sugar
1 teaspoon ground
1/4 teaspoon ground cardamom
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon kosher salt

Fall apart:

3/4 cup all-purpose flour
1/2 cup brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
6 tablespoons saltless butter, softened
4 ounces fell apart halva or marzipan, optional but extremely suggested
A couple of pinches of sprinkles, optional

Instructions

For the crust: Preheat oven to 350 F. Line an 8-by-8-inch square pan with enough parchment paper to have 1-inch wings on 2 sides.

In a stand mixer fitted with a paddle, integrate the butter, sugar, vanilla and salt and beat on medium until pale and fluffy. Lower to low, include both flours and blend to integrate. Press equally into the pan and bake for 10 minutes. Let cool slightly, about 10 minutes, while you make the filling.

For the filling: In a big bowl, toss the apples with the lemon juice. Spray in the flour, sugar, cinnamon, cardamom, nutmeg and salt and toss to integrate. Arrange uniformly on top of the crust.

For the fall apart: In a medium bowl, integrate the flour, sugar, cinnamon and salt. Add the butter and mix with your hands up until crumbly. Sprinkle all over the apples. Sprinkle on the halva or marzipan and sprays, if utilizing. Bake until the crumbles begin to brown, 35 to 40 minutes. Let cool in the pan completely, about 1 hour and then slice into bars. Delight in!

  2. Great recipe. I am wondering if the apples have cooked enough in the oven to soften? I think I would probably want to pre cook them in a saucepan for about 5 mins to kickstart the cooking process. On a personal note… I do a lot of crumble tops and I sugges that you make your crumble topping first and put in the refrigerator for 20+ minutes to firm up – it tends to hold it’s shape better and give a crispier bite.
