2 Tips

If you want the plantains sweeter let the skin darken more almost to the point of spoiling it. All the sweet sugars will come out when you fry it.
I’ve watched this at 8am and best believe I’m having some Caribbean good today. Maybe some oxtails. But for breakfast ackee n saltfish with boil dumplings and green banana and yellow yams.
