the orange part of the scallop is probably the best part for me its so creamy and delicious
That’s where the deeply rich, umami scallop flavour is, to balance the sweet white flesh of the scallop. It’s supposed to be eaten together as a beautiful harmonious balance in flavour. They’re not supposed to be separated in my opinion. Nature did that for a reason.
