Mesen, I don’t go an especial bundle on pesto, as sometimes it tends to overshadow other flavours /textures even, around it. But in re a previous installment, about a delicious asparagus carbonara, there was an aside about using Parmesan as somewhat a shortcut, and my question is, is this instead of Pecorino Romano?
