Active Ingredients for Hunan Chicken Stir Fry:

– Boneless Chicken breast cut into 1.5" thin strips-300 gms

For Marination:
– Pepper powder-1/ 2 tsp
– Salt-1/ 2 tsp
– Egg white-1
– Corn flour -2 tbsp
– Oil- 1 tbsp

Sauce mix:
– Oyster Sauce-3 tbsp
– Sweet Chilli Sauce-1.5 tablespoon
– Vinegar -2 tsp
– Sugar-1 tsp
– Water-1 tbsp

Veggies:
– Three colour bell pepper mix, julienned- around 3/4 cup each (75 gms each).

Tempering:.
– Sliced garlic-2 tsp.
– Red Chilli Sauce-2 tsp.

Other Ingredients:.
– 6 tbsp oil for frying, 1.5 tablespoon out of that for stir frying.
– Salt and pepper powder- pinch for spices.

Garnish:.
– Spring onion greens sliced- 3 tbsp.
– White sesame seeds -1 tsp.

Preparation:.

– Cut the chicken breasts to juliennes.
– Marinate with products specified and reserved for around 30 minutes.
– Make a mix of the sauce. Blend well and reserved.
– Julienne the three coloured bell peppers too similar to the chicken.
– Chop the spring onion greens for garnish.

Process:.

– Heat oil in a wok and include the marinaded and damaged chicken pieces. Fry on high heat for around 2 mins separating the pieces also.
– Continue to fry on medium high heat for another 2 mins and then add the julienned bell pepper pieces. Include a pinch of salt and black pepper to season the julienned bell peppers and then once again keep mixing and frying for another 1-2 minutes. Ensure the peppers keep colour and crunch.
– Eliminate the fried chicken and bell peppers onto a plate.
– Now eliminate all the oil except 1.5 tbsp and after that add the chopped garlic and fry on medium heat for around 30 secs.
– Now include the red chilli sauce and provide a mix for around 30 secs.
– Include the fried chicken and peppers and stir fry for around 30 secs.
– Now include the sauce mix and mix & stir fry for 1-2 minutes till covered.
– Garnish with chopped spring onion greens and white sesame seeds. Serve hot.

  1. Can we use other parts of chicken along with chicken breast and can you also put the link for the sauce used in this ?

    1. Breast or thigh meat… both are equally good. It all depends on your own preference.

    2. Yes, you can have a mix of breast or thigh boneless meat. In this case I used only chicken breast since I wanted the colour of the pieces to be light and shape to be uniform. 😊

    1. @MeMeeeWhy – Yeah, that’s the one I use too. I can’t find anywhere that sells the vegetarian version though.

    2. @ana@analogueman123456787Oh I found it on Amazon. Keep an eye out if it’s not available right now. Kikkoman also sells veg oyster but I am not sure how good it is since I only tried their Soya sauce. And it was amazing.

  2. Would Sriracha sauce be OK to use instead of red chili sauce while frying garlic with ?

    1. Yes, sriracha is a great alternative. Red chilli paste also works very well too.
