  1. If you can’t be bothered to make brine pinch the brine from dill pickles. It gives a really good tang.

  4. Get a poke and put the flour mix and chicken in there, roll down the top and shake. Much less messy.

  5. For people saying southerners don’t brine (or pan fry) chicken, none other than Edna Lewis brined and skillet fried her chicken (in lard). For what it’s worth, I have also always done so. You don’t have to do it, but many southerners do!

    1. Southerners brine the chicken in buttermilk 🙂 This southerner also adds a bit of instant potatoes in the flour mix and it creates a super delicious crunchy exterior with a juicy interior. Yum.

  8. In my restaurant we slow cook the chicken first then bread it and fry it. You can slow cook it a number of different ways, depending on the cut of meat. But the end product is crispy whereas that seems like it would be soggy frying it first and then baking it in the oven.
