This is what’s called “tough love”, lol. Push people hard to uncover the skills and talents they have, but that they didn’t know they had. Also you quicker find if people are cut out for the job or not. This is also the restaurant business where you are being critiqued in real time. If you make a mistake it can cost you dearly as word of mouth spreads. You need to be on your A game.
I used to work in the restaurant business (nicer place) and it was rough. Make a mistake and you were yelled at.
