Turkey Parmesan Panini
Level: Easy
Overall: 45 minutes
Active: 35 minutes
Yield: 4 sandwiches


2 cups cherry tomatoes, cut in half
1/4 cup olive oil
1/2 teaspoon kosher salt
1/4 cup store-bought pesto
8 slices pullman white bread
1/4 cup marinara sauce
8 slices sliced mozzarella or provolone
8 thin slices smoked turkey
1/4 cup newly grated Parmesan


Pre-heat the oven to 450 degrees F.

Place the tomatoes on a rimmed baking sheet. Drizzle with 1 tablespoon olive oil and sprinkle with the salt. Toss well to coat. Roast the tomatoes until beginning to pop and blister, about 15 minutes.

Meanwhile, spread 1 tablespoon pesto on 4 slices of bread. Spread 1 tablespoon marinara on the other 4 slices. Place a piece of mozzarella on each slice of bread. Divide the turkey equally on 4 pieces of bread and top with some of the blistered tomatoes. Spray each sandwich with 1 tablespoon Parmesan. Top with the staying pieces of bread and press carefully.

Heat a large skillet over medium heat. Include half of the remaining oil to the frying pan and include 2 sandwiches. Location a lid somewhat smaller sized than the frying pan on top of the sandwiches and push down. up until golden brown, about 3 minutes. Flip the sandwiches and repeat on the 2nd side. Continue with the staying sandwiches. (Additionally, you can use a panini press.) Serve warm.

    1. A sandwich, along with soup, chips, a slice of pie or cake, and something to drink.

  4. Deli turkey, I’m disappointed.. should have used some leftover carved turkey.

    1. Right. Guess she was forced to do some kind of turkey recipe like everyone else. This is mindless. She just made an elaborate turkey melt.
      There was an edit right after she took a bite…Each time she took a bite actually. Watch and see.

  5. Looks (& sounds) delecioso, also if you’re not a pesto fan use a garlic aioli for the inside speed…YUM

  6. Looks delicious, but seriously, I couldn’t even begin to imagine having this for Thansgiving instead of traditional turkey dinner.
