FRENCH TOAST
Ingredients
1 brioche bread loaf
6 eggs
2 tsps vanilla essence
1/4 cup powdered sugar
1 cup milk
1/2 cup butter
Chocolate spread as needed
Peanut butter spread as needed
Fresh blended berries (strawberries and blueberries) for serving
Crème fraiche for serving
Fresh mint sprig for garnish
Technique
1. Break eggs in shallow wide bowl, include vanilla essence, powdered sugar and milk, and whisk well.
2. Slice the brioche bread into 8 thick slices.
3. Use a part of peanut butter on one side of 4 bread slices and apply the chocolate spread on one side of the staying bread slices. Place this over the peanut buttered pieces with the chocolate side dealing with down to make sandwiches.
4. Dip each sandwich in the egg mixture.
5. Heat butter in a nonstick pan and gently put the drenched sandwich on it. Cook on medium heat for 1-2 minutes on each side.
6. Cut the French toast in half. Serve hot with strawberries and crème fraiche garnished with mint sprig.
