Foxtail millet pongal is an easy and healthy South Indian recipe that you must try!

FOXTAIL MILLET PONGAL

Ingredients

1/2 cup foxtail millet, soaked for 25-30 minutes and drained pipes
2 1/2 cups milk
1/4 cup split skinless green gram (dhuli moong dal), soaked for 25-30 minutes and drained pipes
1/2 cup sliced jaggery
1/2 tsp green cardamom powder
2 tbsps ghee
6-8 cashew nuts, halved
2 tablespoons raisins

Approach

1. Heat a nonstick pan. Add milk, 1/2 cup water and permit to boil.
2. Include foxtail millet, split green gram and cook for 10-15 minutes.
3. Add jaggery, green cardamom powder and cook till jaggery melts.
4. Heat ghee in a little nonstick pan. Include cashew nuts and sauté till light golden brown.
5. Include raisins and sauté for a minute more.
6. Reserve some for garnish and include rest to prepared rice mixture. Cook for 2-3 minutes.
7. Transfer in a serving bowl, garnish with fried cashew nuts and raisins and serve hot.

  1. Millets are great. This is known as kangani कंगनी. We foolishly shifted only to wheat and rice forgetting these extremely nutritious millets that our ancestores predominantly included in their diet. ChefSir do an episode on millets. 🙏
