I recently used some in a roasted winter root-veg soup.
1 red onion. 1 white onion. 1/2 white turnip. 1/2 celeriac. 1 potato. 1 carrot. 1 parsnip. 1 bulbs-worth of smoked-garlic. 1/3 of a bag of Brussel sprouts (each chopped in half). All roasted-together, with olive oil, thyme, oregano and rosemary, shared-out across two baking-trays, in the oven at 200 centigrade for 40 minutes.
Meanwhile, on the cooker-top, I prepped the soup-base; olive oil, frozen garlic & ginger, 1 chicken stockpot, 1 veg stockpot & 1 ham stock-cube, black-pepper, smoked-paprika, sweet-potato mash (as a thickener for the soup) & water. I also had most of a bag of frozen-garden-peas left that I wanted to use-up (heated-up long-enough to defrost the frozen garlic, ginger and peas and melt-in the stockpots and stock-cube).
Once all of the veg in the oven finished roasting, I put it all into the pan on the cooker-top with the soup-base in it. Stirred thoroughly. Then cooked for a further 1/2-hour on #4. Stir regularly. Portioned it out, once finished cooking. Ate two servings that day, and the rest over the weekend.

I like cooking with celeriac, though where I live it is hard to find and the 3 major supermarkets don’t carry them

As you said roasting the celeriac adds much more depth so do it!
No white pepper? Green onion? I guess the celeriac is thee flavour. Haven’t really seen that in South Africa.
