Active ingredients for the Chicken Sukka Dish:

– Chicken, curry cut with bones- 1 Kg

To Make the Masala Powder:
– Cumin Seeds-1 tsp
– Fennel seeds (saunf) -1 tsp
– Black Peppercorns- 1.5 tsp (30 nos.).
– Green Cardamom-4.
– Cloves-4.
– Cinnamon-3 small.

Tempering-.
– Fennel Seeds-1 tsp.
– Curry leaves-20-25.
– Onions chopped- 2 small (120 gms).

Other Spice Powders:.
– Turmeric Powder- 1/2 tsp.
– Red Chilli Powder-1 tsp.
– Coriander Powder- 1 tsp.

Other Ingredients:.
– Tomato, sliced- 1 medium.
– Ginger Garlic paste- 2 tsp.
– Green Chillies slit and cut- 2.
– Curry leaves-15-20.
– Coriander leaves chopped- 2-3 tablespoon.
– Groundnut oil-8 tbsp.
– Salt-2 tsp.

Preparation:.

– Dry roast the entire spices on low heat for 2-3 minutes. Eliminate to a pan to cool. Grind to a powder. Usage 3 tsp of this Spice blend in the curry.
– Chop the onions.
– Also slice the coriander leaves and slit and cut the green chillies.

Process:.

– Heat oil in a kadhai and after that include the fennel seeds. Give a stir and then add the curry leaves. Stir and fry for a minute and after that include the sliced onions.
– Fry on medium heat for around 6-7 minutes till little brown.
– Now add the ginger garlic paste and provide a mix.
– Fry on medium heat for 2 mins till raw odor is gone.
– Now add the chicken, turmeric powder and salt and fry on medium heat for 3-4 minutes till light brown.
– Now add the red chilli powder and coriander powder, mix and fry on medium heat for 3-4 minutes till browned.
– Now add the sliced tomatoes, mix and cook on medium heat for 2 mins.
– Now lower heat to minimum and cover & cook on low heat for around 12 minutes.
– Eliminate cover and cook on high heat for around 2-3 minutes to dry out any extra water that exists.
– Now include 3 tsp of the mixed spice powder which we made earlier and mix and cook on medium heat for around 3-4 minutes.
– Now add the chopped green chillies, curry leaves and chopped coriander leaves.
– Mix and prepare on medium heat for around 2 mins and after that serve.
