Bread Pakoda Chaat | Buttery Corn Chaat | Monsoon ka Mazza | Episode 6 | Sanjeev Kapoor Khazana

Baarish ke mausam mein street side chaat khane ka mazza hi kuch aur hota hai! Lekin security ka dar bhi sabko hota hai. That's why I'm bringing two simple, street design chaat recipes to you – Bread Pakoda Chaat and Buttery Corn Chaat!

BREAD PAKODA CHAAT

Components

6 bread pieces
1 1/2 cups gram flour
Salt to taste
1/4 tsp red chilli powder + to sprinkle
1/4 tsp turmeric powder
2 green chillies, sliced
1/4 tsp carom seeds (ajwain).
A pinch of baking soda.
1 medium onion, sliced + for garnish.
2 tablespoons chopped fresh coriander.
Oil for deep frying.
Sweetened yogurt to drizzle.
Date and tamarind chutney to drizzle.
Green chutney to sprinkle.
Cumin powder to spray.
Chaat masala to sprinkle.
Fresh pomegranate pearls as required.
Masala peanuts as required.
Nylon sev as required.
Sliced fresh coriander for garnish.

Approach.

1. Take gram flour in a bowl. Add salt, red chilli powder, turmeric powder, green chillies, carom seeds, baking soda and onion.
2. Add 3/4 cup water and mix well. Add coriander and blend well.
3. Heat enough oil in a kadai. Dip bread slices in the prepared batter and deep fry till golden brown and crisp.
4. Drain on absorbent paper and set aside. Cut into little pieces and transfer in serving plate.
5. Drizzle sweetened yogurt, date and tamarind chutney and green chutney on top. Sprinkle staying onion, red chilli powder, cumin powder, chaat masala, pomegranate pearls, masala peanuts and nylon sev on top.
6. Sprinkle coriander and serve.

BUTTTERY CORN CHAAT.

Components.

2 cups corn kernel.
4 tablespoons butter.
Salt to taste.
1 tsp red chilli powder.
1/2 tsp chaat masala.
1 tsp black salt.
Crushed black peppercorns to taste.
2 tablespoons newly chopped coriander leaves.
1 green chilli, chopped.
1 lemon.
Coriander sprig for garnish.

Method.

1. Heat sufficient water in non-stick pan, add corn kernels, salt, mix well and prepare till corn kernels are entirely done.
2. Combine together prepared corn kernels, butter, red chilli powder, chaat masala, sprinkle black salt, salt crushed black, coriander, green chillies, squeeze lemon and mix well.
3. Garnish with coriander spring and serve instantly.
