Spiced Salmon Kebabs with Yogurt Sauce

Yield: 4 servings

Active ingredients

1 teaspoon cumin seeds
1 teaspoon coriander seeds
2 cardamom pods
3 cloves
1 cinnamon stick
1 cup Greek yogurt
1/2 small red onion, finely sliced
1 tablespoon fresh lemon juice
1 teaspoon fresh lemon zest
1 teaspoon cayenne pepper
1 (2-pound) fillet salmon, cut horizontally into 1-inch thick slices
Olive oil, for sprinkling
Salt and freshly ground pepper
12 -inch wood skewers, soaked in water for 30 minutes
1/2 orange

Instructions

Heat grill to high. Location spices in a little saute pan and toast on the grill for 45 to 60 seconds, shaking the pan numerous times, or until simply aromatic. Let cool a little and grind in a spice grinder or coffee grinder until carefully ground.

Process yogurt, onion, lemon juice, passion, cayenne, and toasted spices in a food processor until smooth. Set aside or cool if not using for a while.

Thread salmon onto skewers so the fish lies flat. Drizzle with olive oil and season with salt and pepper. Grill for 2 to 3 minutes on each side or till somewhat charred and simply cooked through. Serve with yogurt sauce on the side and drizzle the juice of 1/2 orange over all.

  1. I’m a arbys cook and as standard practice I will lay on the ground and lay the beef across my face and snuff as hard as possible before placing them gently on the arbys sandwich before you eat I check for quality I am quality control and have a food handlers lisnense

  3. Instead of cooking the spices on the stove to open up the flavors, can you microwave them for 15 to 30 sec.?

    1. Microwaves work by heating heating the water in food, so i dont think it would do much to dried spices because theres no water but its worth a shot. I dont think it would hurt or ruin them, just do nothing.
