Homemade No-Egg Nog

Level: Easy
Total: 8 hr 55 minutes (includes chilling time).
Active: 20 min.
Yield: 7 to 8 cups.

Ingredients.

2 cups sugar.
2 1/2 cups whole milk.
2 cups heavy cream.
1 tablespoon vanilla extract.
1/2 teaspoon ground cinnamon.
1/2 teaspoon ground ginger.
1/4 teaspoon ground allspice.
1/4 teaspoon ground nutmeg, plus extra for garnish.
2 cups silver rum or whisky, optional.
A couple of light grates enthusiasm from an orange.

Directions.

Dissolve the sugar: In a medium skillet, heat the sugar with 1 1/2 cups milk over medium-low heat, stirring constantly, till the sugar liquifies. Get rid of from the heat and let cool completely.

Make the eggnog: Transfer the milk-sugar mix to a large bowl and whisk in the remaining cup milk, 1 cup cream, the vanilla, cinnamon, ginger, allspice and nutmeg. The eggnog mix is best made up to this point a day before serving and refrigerated up until all set to serve.

Whip the cream: When prepared to serve, utilize a whisk (or an electrical mixer fitted with the whisk attachment) to whip the remaining cup heavy cream up until stiff peaks form. With a rubber spatula, carefully fold the whipped cream and rum or whisky into the eggnog mix. Include the orange passion and top with additional nutmeg, if desired.

    1. Yes but the spiced milk you have left may not be very balanced. It’s best you find a recipe that’s made to be alcohol free if you don’t feel comfortable balancing sweetness levels on your own.

  1. Ok AG, I respect the effort, but this is just a straight-up spiced milk punch. If you don’t have egg, it can’t be eggnog. That’s like making carrot cake without carrot. I know people are squirrelly about using raw eggs, but you need them for great eggnog. You can always cook the eggs in a creme anglaise first and then mix in the other dairy and booze. Don’t get me wrong, I would happily drink that milk punch, but it just isn’t eggnog.
