Crispy Chicken Skins
Recipe courtesy of Ree Drummond
Level: Easy
Total: 50 min
Active: 10 minutes
Yield: 18 pieces
Ingredients
6 big skin-on chicken breasts
1 teaspoon kosher salt
1 teaspoon lemon pepper
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
Directions
Pre-heat the oven to 350 degrees F. Line a baking sheet with parchment paper.
Carefully pull the skin off the chicken breasts (reserve the breast meat for another usage), pat dry and cut in thirds lengthwise. Position them skin-side up in a single layer on the ready baking sheet.
Mix the salt, pepper, thyme and rosemary together in a little bowl, squashing the spices with a spoon. Sprinkle the chicken skins with a few of the spice mix; it makes more than you need, but you can keep it for another day. Cover the skins with a layer of parchment and top with a baking sheet to weigh it down, ensuring the leading sheet presses down on the skins.
Bake until the skins are browned and crisp, 35 to 40 minutes. Get rid of the top baking sheet and parchment and move the skins to a plate lined with paper towel to cool and crisp up.

Where can you get chicken skins?
From a chicken of course. Just kidding. This was my same question. I mean, I’m not going to go to the store and ask to buy chicken skins. I guess for people who take the skin off? But then they are definitely not the ones who are going to want fried chicken skins! lol. So when is this “dish” worth doing?
Let’s say you’re making chicken soup. If you get chicken with skin on it it’s a good use for it here, unless for some reason you insist on cooking the meat skin on for it.
A good butcher or meat market. I suggest you check early and order ahead. We buy them for Tailgate Parties – deep fried and tossed in Buffalo sauce. Better than pork skins, and easier too.
Just get the skin from the chicken
We have something in common, totally would rather have donut holes ❤️💜💚🦋🦋🦋
I prepare all my chickens skin on. I never have spare chicken skins.
