*”Course 1: Mushroom and Almond Soup”*
A warm, nutty, and creamy soup that serves as the perfect soothing start to the meal.
*_Ingredients:-_*
*Fresh Button Mushrooms:* 400 grams (firm and white)
Almonds: 15–20 pieces (blanched and peeled)
Onion: 1 medium (chopped)
Butter: 1 tablespoon
Milk: ½ cup
White Pepper Powder: To taste
Salt: To taste
Fresh Cream: For drizzling
Water: 4 cups total (2 for blanching, 2 for cooking)

Blanch Almonds: Boil 2 cups of water and blanch the almonds for 4–5 minutes. Drain, transfer to chilled water, and peel the skins. Thinly slice a few for garnish.
Sauté: Melt butter in a pan. Add chopped onions and sauté until translucent. Add the cleaned, sliced mushrooms and the remaining whole almonds. Cook for 5–6 minutes.
Simmer: Add salt and white pepper powder. Pour in 2 cups of water and cook for another 4–5 minutes until mushrooms are tender.
Blend: Allow the mixture to cool slightly, then grind into a fine, smooth paste.
Finish: Return the puree to the pan. Stir in ½ cup of milk and cook for 5–6 minutes on low heat until thickened.
Serve: Ladle into bowls, drizzle with fresh cream, and garnish with sliced almonds.
*”Course 2: Punjabi Pakodewali Kadhi”*
Tangy yogurt-based gravy with melt-in-the-mouth fenugreek fritters.

*For the Kadhi Base:*
Yogurt (Sour): 1½ cups
Gram Flour (Besan): 2–3 tablespoons
Turmeric Powder: ¼ teaspoon
Water: 3 cups
Oil: 2 tablespoons
Cumin Seeds: 1 teaspoon
*For the Pakodas (Fritters):*
Onion: 1 medium (sliced)
Fresh Fenugreek (Methi) Leaves: 1 cup (chopped)
Gram Flour (Besan): As needed for binding
Spices & Salt: To taste
Oil: For deep frying

Prepare Base: Whisk yogurt, gram flour, turmeric, and salt together. Gradually add 3 cups of water to make a smooth, thin mixture.
Make Pakodas: Combine sliced onions, chopped methi leaves, gram flour, and spices. Fry small spoonfuls of the batter in hot oil until golden and crisp. Set aside.
Cook Kadhi: Heat 2 tablespoons of oil and crackle cumin seeds. Pour in the yogurt mixture and cook on low heat, stirring continuously until it thickens and the raw smell of flour disappears.
Combine: Add the fried pakodas to the simmering kadhi and cook for a few more minutes so they soak up the flavors.

Fluffy, aromatic rice to accompany the flavorful kadhi.

Basmati Rice: 2 cups (soaked)
Cumin Seeds (Jeera): 1 tablespoon
Ghee: 2 tablespoons
Water: As required
Fresh Coriander: For garnish
*_Method:-_*
Heat ghee in a pot and add cumin seeds until they splutter and release their aroma.
Add the soaked rice and sauté gently for a minute.
Add water and salt, then cook until the rice is fluffy and each grain is separate. Garnish with fresh coriander.
*_Dessert: Almond and Pistachio Kulfi_*
A rich, chilled treat to provide a satisfying finish to the dinner.
*_Ingredients:-_*
Full Fat Milk: Reduced until thick
Almonds & Pistachios: Ground into a coarse powder
Cardamom Powder: For aroma
Sugar: To taste
*_Method:-_*
Reduce milk in a heavy-bottomed pan until it reaches a creamy consistency.
Stir in the ground nut powder, sugar, and cardamom.
Pour the mixture into kulfi molds and freeze until set.
Demold by rubbing the molds between your palms and serve chilled.
