CHICKEN WITH BAMBOO SHOOT.

Active ingredients.

750 grams chicken, cut into 2 inch pieces on the bone.
100 grams tinned bamboo shoots.
2-3 tablespoons mustard oil.
1 large onion, sliced.
1 tbsp crushed dried red chilli-garlic.
1 medium tomato, sliced.
1 dried Bhoot Jolokia chilli, stemmed and burglarized pieces.
Salt to taste.
Fresh coriander sprig for garnish.

Technique.

1. Heavily slice the bamboo shoots.
2. Heat mustard oil in a deep pan. Include onion and sauté till onions turn golden brown.
3. Include crushed red chilli-garlic mix and sauté for a minute.
4. Add tomato and cook till pulpy.
5. Add chicken and scorch on high heat for 4-5 minutes.
6. Add 1 1/2 cups water, Bhoot Jolokia chilli, salt and bamboo shoots and blend well.
7. Cover and cook on medium heat for 8-10 minutes.
8. Transfer in a serving bowl, garnish with coriander sprig and serve hot.
