Vegetable Tempura | वेजिटेबल टेम्पुरा | Monsoon Recipes | Sanjeev Kapoor Khazana

VEGGIE TEMPURA

Active ingredients

1 medium carrot
1 medium red capsicum
1 medium yellow capsicum
1 medium green capsicum
1 medium onion
1/2 medium cauliflower
Oil for deep-frying
3/4 cup fine-tuned flour (maida).
Salt to taste.
1/2 tsp white pepper powder.
Ice as required.

Approach.

1. Heat sufficient oil in a deep non-stick pan.
2. Diagonally slice the carrot. Cut all the capsicums into thick strips. Cut onion into rings. Different the cauliflower florets.
3. Mix refined flour with salt and white pepper powder in a bowl. Include sufficient water and 10-12 ice cubes and blend to make a smooth batter.
4. Dip vegetables one by one in the batter, slide into hot oil and deep fry till crisp and golden brown. Drain on absorbent paper and serve hot.
