SPICED AND SPIKED HOT CHOCOLATE

Components

2 star anise
3-4 cloves
1 inch cinnamon stick
1/2 cup rum
1 cup chopped dark chocolate
1 cup fresh cream
1/4 cup cocoa powder + for cleaning
4 cups full fat milk
1/4 cup castor sugar
Marshmallow for garnish

Technique

1. Heat fresh cream in a non-stick pan, add dark chocolate and cook till chocolate melts entirely. Take the pan off the heat and permit to cool slightly. Add rum and blend well.
2. Take cocoa powder in a bowl, include 1 cup milk and blend till well integrated.
3. Add remaining milk in a non-stick deep pan, include castor sugar and mix well.
4. Add star anise, cloves, cinnamon stick and give a boil. Add coco powder mix and cook for 3-4 minutes on a medium heat or till mixture pertains to a boil. Stir periodically.
5. Strain the mix into a jar and froth the mix using an electric frothing machine.
6. Pour a portion of the rum mix into private serving glasses and put hot chocolate over it. Dust some coco powder on top and garnish with marshmallows.
