SHEERMAL.
Active ingredients.
2 cups improved flour (maida).
1 teaspoon yeast.
2 teaspoons sugar.
Salt to taste.
1 egg.
1/4 cup pure ghee.
1 cup milk.
Saffron milk for brushing.
2 tablespoons butter + for greasing.
Technique.
1. Place the yeast with a pinch of sugar and salt in a small bowl, include a little water and stir till well blended.
2. Add this mix and one egg to the sieved refined flour. Include some ghee and knead into a soft dough with milk.
3. Cover with a wet cloth and reserved in a damp location for 10 minutes.
4. Melt the remaining ghee and add it to dough and incorporate it well. Knead once again into a soft dough. Cover and reserve for ten minutes.
5. Preheat the oven to 270ºC/ 520 º F.
6. Divide dough into sixteen equal parts and form into balls, cover and reserve for ten minutes.
7. Flatten the balls on a gently floured surface area and roll out each ball into round discs of 6 inch size. Brush the sheermals with liquified saffron and puncture the entire surface area with a fork.
8. Grease a baking tray with butter, arrange the sheermals on it and bake in the preheated oven for ten to twelve minutes.
9. Brush with butter and serve instantly.
