SAI BHAJI

Active ingredients

400 grams spinach leaves, carefully shredded
1/2 medium lot sorrel leaves, finely shredded
15-20 sorrel leaves
2 tablespoons oil
1 teaspoon cumin seeds
2 medium onions, finely chopped
1 inch ginger, carefully sliced
3-4 green chillies, carefully chopped
2 little long brinjals, cut into 1 inch cubes
1 little potato, peeled and cut into 1 inch cubes
4 tablespoons divided Bengal gram, soaked for 1/2 hour and drained
2 big tomatoes, roughly sliced
1/4 teaspoon turmeric powder
1 teaspoon red chilli powder
Salt to taste
Ginger strips for garnish

Approach

1. Heat oil in a pressure cooker and add cumin seeds. When they begin to alter colour, add onions and sauté till golden brown.
2. Include ginger and green chillies, and sauté for a few seconds.
3. Add spinach, shredded sorrel leaves, entire sorrel leaves, brinjal, potato, drained pipes Bengal gram, tomatoes, turmeric powder, red chilli powder and salt. Mix well and stir in 1 1/2 cups water.
4. Cover and till one whistle is released. Minimize the heat and for 8-10 minutes more. Change the heat off and open the lid when the pressure has minimized totally.
5. Eliminate potato cubes with a slotted spoon and blend the staying mix with a hand mixer. Add potato cubes and blend well.
6. Serve hot garnished with ginger strips.
