The paneer in an intense gravy made from chillies, spices and a coconut base tastes simply as scrumptious.
Active ingredients
400 grams home cheese, cut into 1 inch cubes
Masala paste
2 tablespoons oil
1 inch cinnamon stick
8-10 black peppercorns
1 black cardamom
4 green cardamoms
1 star anise, broken
3-4 cloves
2 tbsps coriander seeds
3-4 Kashmiri dried red chillies
4-5 bedgi dried red chillies
1 tsp cumin seeds
3/4 cup grated dried coconut
1 tsp poppy seeds (khaskhas).
Gravy.
1 tablespoon oil.
2 bay leaves.
2 medium onions, carefully sliced.
Salt to taste.
1 1/2 tbsps ginger-garlic paste.
1 cup tomato puree.
2 green chillies, chopped.
1 tablespoon red chilli paste.
1/2 tsp turmeric powder.
1 1/2 tsps coriander powder.
1 tsp sankeshwari red chilli powder.
1/2 tsp garam masala powder.
1 medium green capsicum, cut into 1 inch cubes.
1 tbsp lemon juice.
2 tbsps chopped fresh coriander leaves + for garnish.
Method.
1. Heat oil in a pan. Include cinnamon stick, black peppercorns, black cardamom, green cardamoms, star anise, cloves, coriander seeds, Kashmiri dried red chillies, bedgi dried red chillies, cumin seeds, and coconut and roast till golden. Add poppy seeds and continue to roast for 1 minute. Take the pan off the heat and enable to cool.
2. Transfer the roasted mix in a grinder jar, include 1 cup water and grind to a great paste.
3. Heat oil in the same pan, add bay leaves and cook for a few seconds.
4. Add onions, salt, mix, and cook till golden brown.
5. Add ginger-garlic paste, and sauté for 1 minute. Add tomato puree and mix well. Prepare till the oil separates.
6. Include green chillies, and red chilli paste and blend well. Prepare on medium heat for 2-3 minutes, stirring periodically.
7. Add the ground paste and mix well. Prepare till oil separates.
8. Include turmeric powder, coriander powder, sankeshwari red chilli powder, and garam masala powder and sauté for 1-2 minutes.
9. Add 1 1/2 cups water, mix, and cook for 2-3 minutes. Add capsicum and blend well. Cook for 1-2 minutes.
10. Add lemon juice, mix and cook for a few seconds. Add coriander leaves and sauté for 1 minute. Include cottage cheese and mix, cook for 1 minute.
11. Serve hot garnished with coriander leaves.
