This wholesome flatbread is made with bajra (pearl millet) flour, fresh fenugreek leaves, and a best blend of spices that deliver a burst of flavour in every bite. It's a showstopper dish with a soft yet hearty texture, where the subtle bitterness of methi is completely stabilized by fragrant spices.
You can make it fresh and serve it hot with ghee, chutney, or a basic vegetable curry, letting every bite transportation you straight to the heart of Gujarat.
MASALA METHI BHAKRI.
Ingredients.
1/2 cup chopped fresh fenugreek leaves (methi).
1/2 cup whole wheat flour (atta).
1/2 cup khapli wheat flour.
1/2 tsp red chilli powder.
1/4 tsp turmeric powder.
1 tsp coriander powder.
1 tsp roasted and crushed cumin seeds.
1/2 tsp garam masala powder.
1/4 tsp asafoetida (hing).
1 1/2 tsps toasted white sesame seeds.
2 tsps ginger- green chilli paste.
Salt to taste.
1 tablespoon oil.
Approach.
1. Take whole wheat flour in a bowl. Include khapli wheat flour, red chilli powder, turmeric powder, coriander powder, roasted cumin seeds, garam masala powder, asafoetida, white sesame seeds, ginger- green chilli paste, fenugreek leaves, salt and oil and mix well.
2. Add 1/2 cup water and knead to stiff dough. Cover with a damp muslin cloth and reserve for 10-15 minutes.
3. Roll the dough into thick sheet and cut into roundels with the help of a cookie cutter.
4. Heat a nonstick tawa. Place the prepared rotis on tawa and cook on low heat for 4-5 minutes.
5. Flip and cook on low heat for 5-6 minutes. Drizzle some ghee and cook for 2-3 minutes more.
6. Enable to cool totally and serve.
