Malai ki Sabzi | मलाई की सब्ज़ी | Quick and Easy Recipe | Sanjeev Kapoor Khazana

The name may sound confusing, but this meal is here to make you wanting for more!
Fresh malai/ cream, sauteed with spices to make a delicious, lip smacking sabzi that goes completely with paranthas or nans or perhaps rice!

Active ingredients

350 grams fresh malai
2 tablespoons oil
1 tsp cumin seeds
1 tbsp sliced garlic
1/2 tbsp sliced ginger
2 green chillies, chopped
1 big onion, finely sliced
1 big tomato, finely chopped
Salt to taste
1 tsp sugar
1 tsp red chilli powder
1 tbsp coriander powder
1 tsp cumin powder
1/2 tsp turmeric powder
1/2 tsp garam masala powder
1/4 tsp roasted dried fenugreek leaves (kasuri methi) powder
2-3 tablespoons chopped fresh coriander leaves
Fresh coriander sprig for garnish
Paranthe to serve

Method

1. Heat oil in a non-stick pan. Include cumin seeds and let them change colour.
2. Add garlic, ginger, and green chillies and sauté for 1 minute. Add onion, mix and cook till it turns golden brown.
3. Add tomato, salt and sugar and blend well. Cook till it turns soft and pulpy.
4. Add red chilli powder, coriander powder, cumin powder and turmeric powder and mix well. Prepare for 1 minute.
5. Add fresh malai and blend well. Cook for 1-2 minutes.
6. Add garam masala powder, roasted dried fenugreek leaves powder, and coriander leaves and blend well.
7. Take the pan off the heat and move the mixture into a serving bowl. Garnish with coriander sprig and serve hot with paranthe.

    1. ” Malai” is the thick layer which is formed after cooling down the milk after boiling.The milk should be whole not skimmed or tonned i.e with full fat.
