A great introduction.. Tell the world that frozen fish is far, far, better than _fresh_ seafood from the meat department (they treat it as if it were meat) in the grocery store. The scrap rate of grocery store _fresh fish_ is very high. Which means two things. 1.) They purchase their previously unfrozen _fresh fish_ at a very low price so as to be profitable. 2.) Their customers believe a twisted lie. That grocery store _fresh fish_ is fresh and better than frozen. How this twisted misperception came to be is beyond me. Maybe most have never eaten fresh fish?

ps, I have always thawed my fish first. Overnight in the refrigerator. I find that seems to be better than thawing quickly in water, still wrapped in packaging. I will have to give this a try, cooking frozen fish.
