GAJAR AUR KHAJUR KA

Components

8-10 medium carrots, grated
1 tablespoon pure ghee
1/2 cup sugar
2 cups skimmed milk
3/4 cup dates, seeded and sliced
1/2 teaspoon green cardamom powder
8-10 cashewnuts, approximately chopped
8-10 almonds, blanched and slivered
1/2 cup crumbled khoya/mawa

Method

1. Heat the ghee in a non stick kadai. Add the carrots and stir. Cover and cook for about 5 minutes. Add the sugar and mix well. Cover and cook for further two to three minutes.
2. Add the milk and continue to prepare for six to eight minutes.
3. Add the dates, green cardamom powder, cashewnuts, half the almonds and khoya and mix. Cook for 10 to fifteen minutes or till nearly dry.
4. Serve hot garnished with the staying almond slivers.
