Bored with sooji ka halwa ?? Try this sooji ka halwa with an unusual twist of coarsely ground dates for natural sweet taste and a fascinating texture.

Ingredients

10-15 fresh red dates, seeded and chopped
1 cup semolina (suji/rawa).
4 tbsps ghee.
A pinch of salt.
2 1/2 cups milk.
3/4 cup sugar.
1/4 tsp green cardamom powder.
Blanched pistachio slivers as needed.
Almond slivers for garnish.

Technique.

1. Transfer the dates into a pressure cooker, add 3/4 cup water, mix, and cook for 3-4 whistles. Open the cooker once the pressure has minimized completely.
2. Grind the mixture coarsely with a hand mixer.
3. Heat a nonstick pan. Dry roast semolina for 6-8 minutes.
4. Heat 3 tablespoons ghee in a non-stick pan. Add roasted semolina and mix. Add dates, salt, mix and cook for a minute.
5. Include milk and mix. Cover and cook till the wetness dries.
6. Sugarcoat, cardamom powder and pistachios, mix well, cover and cook for 2 minutes.
7. Drizzle 1 tbsp ghee, mix well, cover and cook for 1 minute.
8. Garnish with some pistachio slivers, almond slivers and serve.
