Exotic Mushroom Stir Fry | The Wok Street | Chef Ankit | Sanjeev Kapoor Khazana

The very best part of Asian cooking is that a great stir fry suffices to prepare a dish. The choicest and the unique of mushrooms stir fried. It's that basic.

Components

8-10 oyster mushrooms
4 dried shitake mushrooms, soaked in warm water for 20 minutes
12-15 white shimeji mushrooms
1 bunch of enoki mushrooms
10-12 pak choy
2 tablespoons blended sesame oil
2 tbsps carefully sliced ginger
2 tablespoons finely sliced garlic
2-3 fresh red chillies, chopped
1 medium onion, sliced
1 medium red capsicum, cut into strips
2 tablespoons oyster sauce
1 tbsp black rice vinegar or malt vinegar
2 tbsps cooking wine
Salt to taste
Black pepper powder to taste
Toasted white sesame seeds for garnish
Sliced up spring onion greens for garnish

Technique

1. Slice the oyster mushrooms.
2. Drain pipes the shitake mushrooms and approximately slice them. Roughly slice the shimeji mushrooms. Trim the ends of the enoki mushrooms and approximately slice them.
3. Approximately slice the pak choy.
4. Heat mixed sesame oil in a wok. Include ginger, garlic, and red chillies and mix well.
5. Include onion and sauté for 1 minute. Add the mushrooms and sauté for 2-3 minutes.
6. Add the red capsicum and toss for 1 minute.
7. Include the pak choy and blend well. Prepare for 1-2 minutes.
8. Stir in the oyster sauce, black rice vinegar, and blend well. Add salt, and black pepper powder and mix till well integrated.
9. Serve hot garnished with toasted white sesame seeds and spring onion greens.
