Dhaba Style Bhindi | ढाबा स्टाइल चटपटी भिंडी मसाला बनाने की आसान रेसिपी | Sanjeev Kapoor Khazana

The majority of have fond memories of food cooked in wayside dhabas and one such is the Dhaba Design Bhindi. Indeed, shallow frying the lady's finger and cooking it fresh with tomato puree and spices does make it yummy.

DHABA DESIGN BHINDI

Ingredients

300 grams girl's fingers (bhindi), stemmed and slit without cutting through
4 tbsps oil
1 tsp cumin seeds
2 tbsps sliced garlic
2-3 green chillies, sliced
2 medium onions, sliced
1 cup fresh tomato puree
Salt to taste
1 tsp red chilli powder
1/2 tsp turmeric powder
1 tablespoon coriander powder
1 tsp cumin powder
2 tbsps cashew paste
1 tsp garam masala powder
1/4 tsp dried fenugreek leaves (kasoori methi) powder
2 tablespoons sliced fresh coriander leaves
Fresh coriander sprig for garnish

Method

1. Heat 2 tablespoons oil in a kadai and sauté the bhindi for 2-3 minutes. Drain pipes and set aside.
2. Heat remaining oil in the very same kadai, add cumin seeds and as soon as they begin to alter colour, add garlic and green chillies sauté for 30 seconds.
3. Include onions and sauté till golden brown. Include tomato puree and salt and mix well. Cover and prepare till oil separates.
4. Include red chilli powder, turmeric powder, coriander powder and cumin powder and blend well.
5. Add 1/2 cup water and blend well. Add cashew paste and mix well.
6. Add 1/2 cup water, cover and cook for 4-5 minutes on medium heat.
7. Add bhindi, garam masala powder, kasoori methi powder and coriander leaves and mix well. Prepare for 1-2 minutes.
8. Transfer in a serving bowl. Garnish with coriander sprig and serve hot.
