Clear Lamb Soup | क्लियर लॅम्ब सूप | Soup Recipes | Sanjeev Kapoor Khazana

The Oriental method of having lamb soup is with veggies included and just the bare minimum few spices.

CLEAR LAMB SOUP

Ingredients

150 grams boneless lamb, thinly sliced
2 tsps sesame oil
1 tsp sliced ginger
2 tsps chopped garlic
3-4 spring onion bulbs, sliced
3-4 button mushrooms, sliced
1 medium carrot, peeled and sliced
2 pak choy, sliced
Salt to taste
Squashed black peppercorns to taste
3 cups lamb stock
A couple of drops of dark soy sauce
Boiled rice noodles to serve
Chilli garlic oil to drizzle

Technique

1. Heat oil in a nonstick wok. Include ginger, garlic and sauté for 30 seconds.
2. Include spring onion bulbs, lamb and sauté on high heat for 2-3 minutes.
3. Include mushrooms, carrot, pak choy, salt, crushed black peppercorns and mix well.
4. Add lamb stock and enable to boil.
5. Add dark soy sauce and blend well.
6. Add some rice noodles in serving bowl. Pour the soup over, drizzle chilli-garlic oil and serve hot.
