Pig meat is my favourite. Ham, bacon, pork ribs, sausages, pork chops and a lovely roast. Pigs are the best meat of all.

Wow! Such an incredible array of beautiful meat and great ideas for new twists on old favourites. Beef cheeks might be tricky to find, but here in Parma, Italy we have a beautiful cut of beef called ‘capello del prete’ π literally the priests hat, which is usually boiled to make traditional Christmas broth for our famous ‘cappelletti’, little round cushions of pasta stuffed with meat and parmesan. I have used the same cut to make beef casseroles and it’s amazingly tender and tasty. Thanks for the marmalade and black pepper glaze, will use it on my ham this year. Happy Christmas!
